COLD WINTER NIGHTS.
CHICKEN LIMA BEAN SOUP
1 POUND
DRY LIMA BEANS, 1 BROILER/FRYER CHICKEN ( 3 TO 3-1/2 POUNDS, 3 QUARTS WATER, 2 CELERY RIBS WITH THE LEAVES, SLICED, 4 CHICKEN
BOUILLON CUBES, 2-1/2 TEASPOON SALT, 1/2 TEASPOON PEPPER, 3 MEDIUM CARROTS, CHOPPED, 4 CUPS CHOPPED FRESH SPINACH, 2 TABLESPOONS
MINCED FRESH PARSLEY.
IN A DUTCH OVEN OR SOUP KETTLE, COMBINE THE BEANS, CHICKEN, WATER, CELERY, BOUILLON,
SALT AND PEPPER, BRING TO A BOIL. REDUCE HEAT, COVER AND SIMMER FOR 2 HOURS OR UNTIL THE BEANS ARE TENDER. REMOVE THE CHICKEN,
ALLOW TO COOL. DEBONE AND CUT THE CHICKEN INTO CHUNKS, RETURN TO PAN. ADD CARROTS, SIMMER FOR 30 MINUTES OR UNTIL TENDER.
STIR IN SPANACH AND PARSLEY, HEAT THROUGH. YIELD: 12-14 SERVINGS.

on the homesteading life. Our mission is: TO HELP OTHERS WITH HOMESTEADING AND PREPAREDNESS FOR THE GLORY OF GOD. We have
a deep love for GOD and HOMESTEADING. The word homestead means self-sufficiency. We use heirloom seeds and organic plants.
John has a degree in horticulture. Jerrie has some home-economics education. We do not like the genetic engineering food,
and we try to use as much organic food as we can. We get so much joy and happiness from our garden. We believe in the heirloom
seeds. They have the most flavor and you can save them from year to year. Gardening is the best food storage that there
is, and it tastes so good !

MARY'SHOMESTEAD we talk a lot about organic food, growing it and shopping for the best organic food. We can, dry, freeze,
and pickle it. There are other kinds of preparedness that is important.
Water is the most
important. You will need at least 14 gallons per person for 2 weeks. You can not live without water.
There are
many other items also, medicines, first aid, fuel, heat, books, a bible, heirloom garden seeds, gas for cooking and much more.
