PIZZA DOUGH

1 PACKAGE DRY YEAST, 1 CUP WARM WATER ( 110 F),  3 1/4 TO 3 1/2  CUPS ALL-PURPOSE FLOUR

THIS IS A BY HAND METHOD OF PREPARING THE PIZZA.

DISSOLVE THE YEAST IN 1/4 CUP WATER. BY HAND: PUT 3 CUPS FLOUR IN A MEDIUM SIZED BOWL. MIX IN THE SALT & THE REMAINING  1 CUP OF THE WARM WATER, GRADUALLY WORK TOGETHER AND GATHER THE DOUGH INTO A  BALL.  TRANFER TO A BREAD BORARD & KNEAD ABOUT 10 MINUTES, ADDING MORE FLOUR TO MAKE A SOFT DOUGH.

PUT THE DOUGH INTO AN OILED BOWL, COVER WITH A TOWEL  & LEAVE TO RISE IN A WARM SPOT 1 1/2 TO 2 HOURS, OR UNTIL THE DOUGH IS DOUBLED IN BULK. PUNCH DOWN & LET REST 10 MINUTES BEFOR ROLLING AND SHAPING.
THIS WILL MAKE2 - 12-INCH PIZZAS OR ONE 12 X 18-INCH PIZZA , OR 6  4-INCH AMALL ROUND PIZZAS.

PIZZA WITH CANNED TOMATOES

THIS RECIPE YOU MAY USE YOUR CANNED TOMATOES THAT CAME FROM YOUR GARDEN. ANOTHER OPTION IS COMMERCIAL CANNED TOMATOES IF YOU PREFER.

ONE RECIPE PIZZA DOUGH : 2 1/2 CUPS CANNED ITALIAN PLUM TOMATOES, 1/ 1/2 CUPS CHOPPED MOZZARELLA, 1 TABLESPOON OLIVE OIL, SALT & PEPPER, 1/2 CUP FRESHLY GRATED OREGANO.

PREHEAT THE OVEN TO 475 F. PLACE THE RACK IN THE LOWER THIRD OF THE OVEN.

ROLL & STRETCH AND SPREAD THE DOUGH IN A LIGHTLY OILED PIZZA PANS. CHOP THE TOMATOES AND PLACE EVENLY OVER THE DOUGH. MIX THE MOZZARELLA WITH THE OLIVE OIL, SALT, AND PEPPER AND SPRINKLE OVER THE TOMATOES. SCATTER THE PARMESAN CHEESE, BASIL, & THE OREGANO, ON TOP  AND SEASON WITH SALT, PEPPER, AND A LITTLE OLIVE OIL. BAKE 12 MINUTES, OR UNTIL THE CHEESES ARE MELTED AND THE BOTTOM IS CRISP.

I WOULD BAKE ONE PIZZA AT A TIME UNLESS YOUR OVEN IS IS LARGE ENOUGH FOR 2 PANS . I BAKE THE FIRST PIZZA AND THEN PREPARE THE SECOND WHILE THE FIRST IS BAKING. AN UNBAKED PIZZA WILL KEEP WITH THE TOPPINGS ON FOR 15-20 MINUTES.

 

PIZZA DOUGH USING THE

FOOD PROCESSOR.

7 CUPS FLOUR, 2  1/2 TEASPOONS INSTANT YEAST,  1 TABLESPOON SALT,  2  1/2 CUPS OF WARM WATER,  4 TABLESPOONS OF OLIVE OIL

COMBINE THE FLOUR, YEAST, AND SALT AND USE THE PULSE ATTACHMENT AND BLEND. ADD  THE WARM WATER AND THE OLIVE OIL AND PULSE UNTIL THE DOUGH COMES TOGETHER.

TRANSFER TO A LIGHTLY FLOURED BREAD BOARD, OR A LIGHTLY FLOURED WORK SURFACE.

KNEAD THE DOUGH FOR 1-2 MINUTES AND FORM A SMOOTH BALL.

PLACE IN AN OILED LARGE BOWL, TURN TO COAT THE DOUGH WITH THE OIL, AND COVER WITH A CLOTH OR PLASTIC WRAP. LET THE DOUGH RISE IN A WARM PLACE UNTIL IT IS DOUBLED IN BULK. LET RISE ABOUT 1  1/2 HOURS.

PLACE THE DOUGH ON A WOODEN BREAD BOARD, THAT IS LIGHTLY FLOURED, PUNCH DOWN, AND KNEAD INTO A SMOOTH CIRCLE. DIVIDE INTO 4 SMOOTH BALLS & BE SURE TO DUST WITH FLOUR. COVER WITH A KITCHEN TOWEL AND LET STAND FOR 10 MINUTES.

YOU MAY PLACE THE DOUGH IN THE REFRIGERATOR , & COVER IT WITH PLASTIC. YOU MAY KEEP IT OVERNIGHT. BESURE TO RETURN IT TO ROOM TEMPERATURE BEFORE USING IT IN A RECIPE.

TO FREEZE THE DOUGH, WRAP IN A PLASTIC WRAP BEFORE PLACING IT IN THE FREEZER . TO THAW, UNWRAP THE DOUGH, PLACE ON A PLATE , AND LET STAND UNTIL IT REACHES ROOM TEMPERATURE AND BEGINS TO RISE AGAIN. LET RISE ABOUT 3 HOURS.

 

 

MAKING PIZZA WITH THE ABOVE DOUGH

USE 1 DOUGH BALL FOR THE FOLLOWING AND FREEZE

THE OTHER 3 DOUGH BALLS FOR ANOTHER  MEAL.  YOU CAN ROLL OUT THE DOUGH FOR  YOUR PIZZA AND HAVE IT READY IN THE FREEZER TO USE WHEN YOU WANT IT.

THIS  IS ONE PIZZA , USING 1 DOUGH BALL ,  1 8 OZ TOMATO SAUCE, ABOVE, 1/2 CUP GREEN ONION, 1/2 PITTED RIPE OLIVES, 1 CUP CHOPPED GREEN PEPPERS,  1/2 CUP OF FRESH CHOPPED BASIL,  2-3 CUPS SHREDDED MOZZARELLA CHEESE, 1 CUP SLICED FRESH MUSHROOMS.

PAN PIZZA: GREASE A 11 X 7X 1 1/2 PAN. YOU MAY SPRINKLE WITH CORNMEAL. PAT THE DOUGH INTO BOTTOMS AND HALFWAY UP THE SIDES OF THE PREPARED PANS. COVER, LET RISE IN A WARM PLACE TILL DOUBLE IN BULK, 30-45 MINUTES. BAKE IN A 375 F OVEN 25 MINUTES OR TILL LIGHTLY BROWNED.  SPREAD TOMATO SAUCE OVER THE HOT CRUST. SPRINKLE THE VEGETABLES OVER THE TOMATO SAUCE, & ADD THE CHEESE ATOP OF THE PIZZA. ADD PIECES OF BASIL ON TOP OF THE PIZZA. BAKE  15-20 MINUTES MORE. SERVES 6.



OTHER OPTIONS: YOU COULD USE:
ONE 16 OUNCE LOAF FROZEN BREAD DOUGH, THAWED AND HALVED.

ENGLISH MUFFIN HALVES. TOP WITH THE SAUCE, VEGETABLES & CHEESE. BAKE IN A 425 F  OVEN ABOUT 10 MINUTES OR TILL HEATED THROUGH.
